The objective of this study was to investigate the quality improvement of gluten-free bread made from corn flour and cassava starch by adding pumpkin seed protein concentrate (PSPC). The study also examined the influence of proofing time and baking temperature on the physicochemical properties of the bread. The research analyzed the composition of PSPC, changes in the pasting properties of the flour, and the thermal properties of dough with the addition of 5% and 10% PSPC (based on flour weight). Bread quality was also evaluated, including chemical composition and physical characteristics such as crumb and crust color, pore size, cell density, and textural properties. The conditions for the study were a proofing time of 45 minutes and baking at 170 °C for 50 minutes. For the proofing time study, the duration was extended to 60 minutes, while for the baking temperature study, the temperature was increased to 200 °C. Both of these variable conditions were tested on bread containing 5% PSPC. The results showed that PSPC contained 3.91% moisture, 65.49% protein, 8.30% fat, 10.10% ash, 14.19% fiber, and 1.92% carbohydrate on a dry weight basis. This study aims to apply Failure Mode and Effects Analysis (FMEA) combined with the Food Safety Management System (ISO 22000) in the food additive manufacturing industry to enhance risk management efficiency and improve process safety. The study begins with a comprehensive process flow analysis, covering raw material reception, mixing, packaging, and distribution. Additionally, physical, chemical, biological, and allergen hazards are identified to minimize customer complaints related to food safety.

Hazard assessment was conducted using the Hazard Analysis and Critical Control Points (HACCP) methodology, employing a decision tree to determine Critical Control Points (CCPs) and Operational Prerequisite Programs (OPRPs) for establishing appropriate control measures. Furthermore, FMEA was incorporated to analyze risks at each process stage by utilizing Action Priority (AP) and Risk Priority Number (RPN) values to identify areas requiring improvement or additional control measures to maintain risk at an acceptable level.

The results indicated that HACCP analysis identified chemical hazards in the raw material reception and finished product handling stages as OPRPs, while physical hazards in the filtration steps during mixing and packaging were classified as CCPs. These findings aligned with FMEA results, which assigned high/medium AP levels and RPN values exceeding 100 to these stages. Moreover, FMEA revealed additional risks beyond those identified as CCPs/OPRPs. Thus, integrating FMEA with ISO 22000 enhances the accuracy of identifying potential risks and failures within the process. Following the improvement of the identified high-risk steps, the study resulted in measures that reduced customer complaints and contributed to greater product safety.; การศึกษานี้มีวัตถุประสงค์ในการประยุกต์ใช้การวิเคราะห์ข้อบกพร่องและผลกระทบ (FMEA) ร่วมกับระบบการจัดการความปลอดภัยด้านอาหาร (ISO 22000) ในอุตสาหกรรมการผลิตวัตถุเจือปนอาหาร เพื่อปรับปรุงประสิทธิภาพในการจัดการความเสี่ยงและเพิ่มความปลอดภัยในกระบวนการ โดยเริ่มจากการวิเคราะห์แผนผังกระบวนการทุกกระบวนการ ได้แก่ การรับเข้า การผสม การแบ่งบรรจุ และการค้า รวมถึงการชี้บ่งอันตรายทางกายภาพ เคมี ชีวภาพ และสารก่อภูมิแพ้ เพื่อลดปัญหาข้อร้องเรียนลูกค้าที่เกี่ยวข้องกับความปลอดภัยอาหาร

การประเมินอันตรายถูกดำเนินการตามแนวทางของ ISO 22000 โดยใช้แผนผังการตัดสินใจและการกำหนดจุดควบคุมวิกฤติ (CCP) และโปรแกรมการควบคุมการปฏิบัติงานขั้นพื้นฐาน (OPRP) เพื่อระบุมาตรการควบคุมอันตรายที่อาจเกิดขึ้น นอกจากนี้ยังได้นำ FMEA มาร่วมวิเคราะห์ความเสี่ยงในแต่ละขั้นตอนของกระบวนการ โดยใช้ค่าลำดับความสำคัญของการดำเนินการ (Action Priority: AP) และค่าลำดับความสำคัญความเสี่ยง (Risk Priority Number: RPN) เพื่อระบุจุดที่ต้องปรับปรุงหรือเพิ่มมาตรการควบคุมให้สามารถลดระดับความเสี่ยงให้อยู่ในระดับที่ยอมรับได้

ผลการวิจัยพบว่าการวิเคราะห์ด้วย ISO 22000 ระบุอันตรายทางเคมีของขั้นตอนการรับวัตถุดิบและสินค้าสำเร็จรูปเป็นจุด OPRP และอันตรายทางกายภาพของขั้นตอนการกรองในกระบวนการผสมและแบ่งบรรจุเป็นจุด CCP ซึ่งสอดคล้องกับผลของ FMEA ที่ขั้นตอนดังกล่าวมีระดับ AP สูง/ปานกลาง และค่า RPN มากกว่า 100 เช่นกัน นอกจากนี้ FMEA ยังแสดงให้เห็นความเสี่ยงนอกเหนือจากขั้นตอนที่ถูกระบุว่าเป็นจุด OPRPs/CCPs อีกด้วย ดังนั้นการใช้ FMEA ร่วมกับ ISO 22000 จึงช่วยเพิ่มความแม่นยำในการระบุความเสี่ยง/ความล้มเหลวที่อาจเกิดขึ้นในกระบวนการได้อย่างมีประสิทธิภาพ ภายหลังการปรับปรุงขั้นตอนที่ถูกระบุว่ามีความเสี่ยง นำไปสู่มาตรการที่สามารถลดข้อร้องเรียนของลูกค้าและเพิ่มความปลอดภัยในผลิตภัณฑ์ได้

This research aims to reduce waste in the noodle packaging process by using quality tools, which are analysis techniques that help understand the problem and provide information that can be used to solve problems in finding the cause. From collecting data on noodle products problems, including the packaging process, production volume, and defect volume from 2022 to 2024, to analyze the cause and fix the defects at the right point.

The quality control analysis in this research utilizes a check sheet, specifically a defect data entry form, to categorize and distinguish between the causes and types of defects. Then brainstorming between the business development department, the production department, and the quality control department throughout the production process, until the noodle packaging process is used as a fishbone diagram. The data is displayed to show the amount of defect. The classification types of waste are found to compare both before and after improving waste reduction using graphs and control charts to know the percentage of waste both before and after improvement, in order to know the extent of the defects that occur

The results show that using quality tools helps to know the cause and guidelines for reducing defect in the noodle packaging process. And the causes of waste are packaging, process, and people, respectively. Therefore, the researcher focuses on solving the problem at the main cause, which is packaging and process. The defect in the dried noodle packaging process was reduced from 9.71 percent to 0.39 percent (lower than the company's target of 5 percent). This research led to the creation of a new work process for the company, adding packaging tools to help with the workforce, making the packaging process more efficient, resulting in a reduction in complaints within the company, and delivering products to customers on schedule.; งานวิจัยนี้มีวัตถุประสงค์เพื่อลดของเสียในกระบวนการบรรจุก๋วยเตี๋ยว โดยใช้เครื่องมือควบคุมคุณภาพ (Quality Control Tools: QC Tools) ซึ่งเป็นเทคนิคการวิเคราะห์ ช่วยให้เข้าใจปัญหาและเป็นข้อมูลที่สามารถนำไปใช้ในการแก้ไขปัญหาในการค้นหาสาเหตุ จากการเก็บข้อมูลสินค้าก๋วยเตี๋ยวที่พบปัญหา ได้แก่ กระบวนการบรรจุ จำนวนการผลิต และจำนวนของเสียตั้งแต่ปี พ.ศ. 2565-2567 เพื่อวิเคราะห์หาสาเหตุ และแก้ไขข้อบกพร่องได้อย่างถูกจุด

    โดยเครื่องมือควบคุมคุณภาพที่ใช้วิเคราะห์งานวิจัยนี้ คือ แผ่นตรวจสอบ (Check sheet) ที่ทำในรูปแบบฟอร์มกรอกข้อมูลของเสีย เพื่อช่วยแยกสาเหตุและประเภทของเสีย จากนั้นร่วมระดมความคิดกันระหว่าง ฝ่ายพัฒนาธุรกิจ ฝ่ายผลิต และฝ่ายควบคุมคุณภาพ ในตลอดกระบวนการผลิตจนถึงกระบวนการบรรจุก๋วยเตี๋ยวด้วยแผนผังก้างปลา (Fish-bone Diagram) จากนั้นนำข้อมูลมาแสดงผลจำนวนของเสีย พร้อมจำแนกประเภทของเสียที่พบเพื่อเปรียบเทียบทั้งก่อนและหลังปรับปรุงการลดของเสียด้วยกราฟ (Graph) และแผนภูมิควบคุม (Control Chart) เพื่อให้ทราบเปอร์เซ็นต์ของเสียทั้งก่อนและหลังการปรับปรุง และเพื่อทราบขอบเขตความบกพร่องที่เกิดขึ้น

ผลการวิจัยนี้พบว่าการใช้เครื่องมือควบคุมคุณภาพเป็นตัวช่วยให้ทราบสาเหตุและแนวทางการลดของเสียที่เกิดในกระบวนการบรรจุก๋วยเตี๋ยวได้ และสาเหตุที่ทำให้เกิดของเสีย คือ บรรจุภัณฑ์ กระบวนการ และคน ตามลำดับ ดังนั้นผู้วิจัยจึงมุ่งเน้นการแก้ไขปัญหาที่สาเหตุหลัก คือ บรรจุภัณฑ์และกระบวนการ โดยของเสียในกระบวนการบรรจุเส้นก๋วยเตี๋ยวอบแห้งลดลง จากร้อยละ 9.71 เหลือ ร้อยละ 0.39 (ต่ำกว่าค่าเป้าหมายของบริษัทที่กำหนดไว้ คือ ร้อยละ 5) และจากการวิจัยนี้นำไปสู่การสร้างกระบวนการทำงานใหม่ให้กับบริษัท โดยเพิ่มเครื่องมือการบรรจุเข้ามาช่วยเสริมแรงงานคน ทำให้กระบวนการบรรจุเป็นไปอย่างมีประสิทธิภาพ ส่งผลให้ลดข้อร้องเรียนภายในบริษัทรวมถึงการส่งสินค้าให้กับลูกค้าได้ตามกำหนดการ

The purpose of this study was to develop a plant-based meatball analogue by investigating the effect of ratio between soy protein and wheat gluten on physical properties of plant-based meatball analogue for determining a basic formula. Using a mixture design experiment. The results revealed that the two variable had a linear relationship (p ≤ 0.05) with gumminess, a quadratic relationship with chewiness, and a cubic relationship with expressible water. These equation was then used for predicting the optimum soy protein and wheat gluten. It was found that the optimum ratio was soy protein  : wheat gluten at 20.0 : 30.0 . The influences of texturizing agents at various ratios of modified tapioca starch : konjac flour at 5:1.5, 10:1.5, and 10:2.5 % w/w were subsequently conducted. Sensory evaluation was performed on 5 attributes: firmness, hardness, softness, saltiness, and spice flavor, using the Just About Right (JAR) method. Overall liking was assessed using the 9-point hedonic scale. Consumers expressed the highest overall liking for the sample containing modified tapioca starch : konjac flour at 10:1.5 %w/w, either boiled or fried. The boiled product had an average overall liking score of 5.63 ± 1.81, whilst the fried product had an average overall liking score of 6.53 ± 1.73. However, it still required improvements in firmness and hardness. To address this, the amount of modified tapioca starch was increased to 15% and 20% w/w. The formulation with 20% w/w modified tapioca starch was selected as the base recipe for young jackfruit fortification, according to hardness, gumminess, chewiness, gel strength and the increase in water-holding capacity led to a significant reduction in expressible water (p ≤ 0.05) compared to the control. Young jackfruit was incorporated into the product at three levels: 10%, 20%, and 30% w/w. The optimal level was determined to be 10% w/w, which received the highest average overall liking score. The boiled product had an average overall liking score of 6.23 ± 1.33, whilst the fried product had an overall liking score of 7.13 ± 1.28. Proximate analysis of compositions of the control and 10% young jackfruit revealed that the jackfruit fortified sample had higher moisture content but lower fat content. Thus, young jackfruit has potential for improving the texture of plant-based meatballs and enhancing water-holding capacity. Additionally, incorporating young jackfruit into the product helps increase water retention with slight impact on texture quality at a certain amount.; การศึกษาครั้งนี้มีวัตถุประสงค์เพื่อพัฒนาผลิตภัณฑ์ลูกชิ้นเลียนแบบเนื้อสัตว์จากพืช โดยศึกษาผลของอัตราส่วนที่เหมาะสมระหว่างโปรตีนถั่วเหลืองและกลูเตนข้าวสาลีต่อสมบัติทางกายภาพของลูกชิ้นเลียนแบบเนื้อสัตว์จากพืชเพื่อกำหนดสูตรตั้งต้น โดยออกแบบการทดลองแบบผสม (Mixture design) พบว่าตัวแปรต้นทั้ง 2 ได้แก่โปรตีนถั่วเหลืองและกลูเตนข้าวสาลีมีความสัมพันธ์แบบ Linear relationship (p ≤ 0.05) กับ Gumminess และมีความสัมพันธ์แบบ Quadatic relationship กับ Chewiness และมีความสัมพันธ์แบบ Cubic relationship กับปริมาณน้ำที่สูญเสีย (Expressible water) ซึ่งเมื่อนำสมการที่มีความสัมพันธ์กันทั้ง 3 ไปทำนายพบว่าอัตราส่วนปริมาณโปรตีนถั่วเหลืองและกลูเตนข้าวสาลีที่เหมาะสมที่จะนำไปพัฒนาต่อ คือ ใช้โปรตีนถั่วเหลืองเท่ากับ 20 ส่วน และกลูเตนข้าวสาลีเท่ากับ 30 ส่วน เมื่อนำมาพัฒนาผลิตภัณฑ์เพื่อศึกษาอิทธิพลของการใช้สารปรับปรุงเนื้อสัมผัสระหว่างแป้งมันสำปะหลังดัดแปรและผงบุก ในอัตราส่วน 5 : 1.5, 10 : 1.5 และ 10 : 2.5 % โดยน้ำหนัก ตามลำดับ ประเมินคุณลักษณะทางประสาทสัมผัส 5 ด้าน ได้แก่ ความแน่นเนื้อ ความแข็ง ความนิ่ม รสเค็มและกลิ่นรสเครื่องเทศ โดยใช้วิธี Just-About-Right (JAR) และประเมินความชอบโดยรวมโดยใช้วิธี 9-point hedonic scale พบว่าสูตรที่ใช้แป้งมันสำปะหลังดัดแปร 10% โดยน้ำหนักและผงบุก 1.5% โดยน้ำหนัก เป็นส่วนผสมที่เหมาะสมทั้งผลิตภัณฑ์ที่ประเมินในรูปแบบต้มและทอด โดยผลิตภัณฑ์รูปแบบต้มได้คะแนนความชอบโดยรวมเฉลี่ย 5.63 ± 1.81 และผลิตภัณฑ์รูปแบบทอดได้คะแนนความชอบโดยรวมเฉลี่ย 6.53 ± 1.73 แต่พบว่ายังคงต้องปรับปรุงความแน่นเนื้อและความแข็งเพิ่มเติม โดยทำการปรับเพิ่มปริมาณแป้งมันสำปะหลังดัดแปรเป็น 15% และ 20% โดยน้ำหนัก ซึ่งพบว่าสูตรที่ปรับเพิ่มปริมาณแป้งมันสำปะหลังดัดแปรที่ 20% โดยน้ำหนักเป็นสูตรที่เหมาะสมในการเสริมด้วยขนุนอ่อน เนื่องจากเมื่อพิจารณาจากแนวโน้มของผลการศึกษาทางด้านเนื้อสัมผัส พบว่ามีแนวโน้มของค่าความแข็ง (Hardness) แรงที่ใช้ในการเคี้ยวอาหารให้แตกตัวออกจากกัน (Gumminess) พลังงานที่ใช้เคี้ยวอาหารแข็งจนถึงขั้นพร้อมที่จะกลืน (Chewiness) ค่าความแข็งแรงเจล (Gel strength) และความสามารถในการอุ้มน้ำที่สูงขึ้น จึงทำให้ปริมาณน้ำที่สูญเสียลดลงอย่างมีนัยสำคัญ (p ≤ 0.05) เมื่อเทียบกับสูตรควบคุมก่อนทำการเพิ่มปริมาณแป้งมันสำปะหลังดัดแปร จากการทดลองเสริมขนุนอ่อนลงในผลิตภัณฑ์ 3 ระดับ ที่ 10%, 20% และ 30% โดยน้ำหนัก พบว่าปริมาณขนุนอ่อนที่สามารถเสริมลงในผลิตภัณฑ์ คือ 10% โดยน้ำหนัก ซึ่งได้รับคะแนนเฉลี่ยด้านความชอบโดยรวมสูงสุด โดยผลิตภัณฑ์ในรูปแบบต้มได้รับคะแนนเฉลี่ยที่ 6.23 ± 1.33 ในขณะที่ผลิตภัณฑ์ในรูปแบบทอดได้รับคะแนนเฉลี่ยที่ 7.13 ± 1.28 ทั้งนี้จากการวิเคราะห์ปริมาณสารประกอบหลักของลูกชิ้นเลียนแบบเนื้อสัตว์จากพืชสูตรควบคุมและสูตรที่เสริมด้วยขนุนอ่อน 10% โดยน้ำหนักพบว่าสูตรที่เสริมด้วยขนุนอ่อน 10% โดยน้ำหนัก มีความชื้นเพิ่มขึ้นและมีปริมาณไขมันลดลง ดังนั้นขนุนอ่อนจึงมีศักยภาพในการปรับปรุงเนื้อสัมผัสของลูกชิ้นเลียนแบบเนื้อสัตว์จากพืช และเพิ่มความสามารถในการอุ้มน้ำ นอกจากนี้การเสริมขนุนอ่อนในปริมาณหนึ่งช่วยเพิ่มความสามารถในการอุ้มน้ำให้แก่ผลิตภัณฑ์โดยส่งผลกระทบต่อเนื้อสัมผัสของผลิตภัณฑ์เล็กน้อย
